- Freímos calabacín en la sartén, reservar.
- Salteamos unos espárragos con puerro y sal gruesa, cuando queden dorados reservamos.
- Montaje, con un aro de emplatar colocamos la primera base, con ayuda de una manga pastelera, primero la emulsión de patata. Sobre ella colocamos el calabacín reservado. Después colocaremos el puerro y las pintitas de espárragos. Sobre esta capa espolvoreamos semillas ecológicas variadas, las aceitunas, el kumato confitado y por último los chips en forma vertical.
