- En un cuenco pon la carne picada, echa sal y pimienta al gusto, orégano y un tercio del sofrito de verduras y remueve bien.
- Después añade la yema de huevo y mezcla bien hasta integrar.
- Coge porciones del tamaño deseado y pasa estas por harina, sacudiendo el exceso. Repite esta operación hasta terminar toda la carne.Un truco para formar las albóndigas es coger una taza o cuenco mediano y bajo, poner dentro harina y la porción de carne de una albóndiga. Después gira la taza sobre si misma en círculos, de esta forma las albóndigas te saldrán todas igual de redondas y sin mancharte.
- Pon abundante aceite en una sartén y cuando este caliente ve friendo las albóndigas hasta que cojan un ligero color dorado.
- Pon el sofrito restante en una olla y ve introduciendo las albóndigas fritas intentando escurrir el máximo de aceite. Cubre con agua y cuece durante 20 minutos. Rectifica de sal si fuera necesario.
- Saca las albóndigas a un bol y tritura la salsa hasta obtener una consistencia fina. Añade de nuevo las albóndigas y calienta de nuevo un par de minutos. Mi recomendación es que las acompañes de unas patatas fritas con unos ajos.
